This class is taught by one of our resident chefs, Alyson Flemming. Alyson visited Lisbon and some of the surrounding towns as well as Sao Miguel in the Azores for the first time this fall. The fresh fish, local farms, beautiful scenery and the wonderful hospitality of the people made her hesitant to ever leave. Portuguese cuisine is focused on simple, extremely fresh ingredients and is all about technique. The land of Port, olive oil, and salt cod has so much to offer. In the class we will dive into these precise cooking techniques that highlight the most important thing of all, great ingredients.
Dishes may include:
Salt cod fritters
Grilled sardine toasts with preserved lemon
Fried mackerel
Sweet potato “family bread” and farm cheese
Braised beef
Clams with coriander and garlic
Stewed tomatoes and cabbage
Poached potatoes with paprika
Pasteis de nata
A bit about Alyson: Alyson started cooking in professional kitchens at the age of 16. She’s enjoyed all aspects of the culinary world. She’s been a line cook, sous chef, pastry chef, bread baker, restaurant owner, private chef and a caterer. She loves food and everything that goes into creating a beautiful meal. When she’s not cooking she enjoys gardening, hiking, eating at the great restaurants in Maine, traveling, spending time with cats and dogs and being in or near the ocean as much as possible.
